Bars have menus, but you can also order whatever you want from a bar? /u/i_see_dead_carrots No such thing as stupid questions

I’m newly of drinking age in the US and still unfamiliar with bar culture. When I’ve been to bars before in other countries, or restaurants with bars here in the states, there have always been drink menus with about 10-20 specialty drinks and cocktails that are supposed to be unique or especially good in that bar. However, people can (and normally do) also go in and order whatever drink they want, even if it’s not on the menu or a variation of something on the menu? I’m just looking for a clarification/confirmation here. For example, someone can order a Long Island iced tea at a bar where that isn’t on any menu, and the bartender knows what it is and will make it for them, and that is totally normal and not frowned upon or annoying? I know this is kind of an absurd question, I’m just overthinking I fear.
