Why do American restaurants take your card away from you when you pay your bill? /u/beansarefun No such thing as stupid questions

For context, I’m Canadian, so restaurant ‘culture’ is fairly similar to the US (tipping, etc.). However, I have never once had a waiter take my credit card away from the table to pay for my bill. When you have to pay, they will bring you a copy of your bill with a handheld payment terminal. The waiter selects the right bill on the terminal and hands it to you, you select payment method, tip, and tap/swipe/insert your card to pay. The card never leaves your sight. Is there a reason that American restaurants don’t or can’t do this?
